The drying process brings out its sweetness, giving the Ancho a flavor that’s slightly reminiscent of a raisin with an earthy balance. As complex as the region’s history, Mexican cuisine features as many as 60 different types of chiles. The Ancho chile, a Mexican native, is most often used when a dish calls for some mild heat. It’s popular as an addition to a mole sauce or to be served with pulled pork.
