Chile-Lime Adobo Chicken & Vegetables Sheet Pan Starter is crafted to highlight the authentic flavors of Mexican cuisine. A combination of chipotle and ancho chiles recreates the flavors of canned chipotles in traditional adobo sauce with smoky, spicy punch balanced with sweet honey and tart lime.
Adobo sauce gets its name from the Spanish verb for “marinade” or “adobar.” Nowadays, adobo sauce is typically found in canned form along with chipotle chiles. Curious Spoon’s take on adobo includes ancho chiles, the ripe and dried version of a poblano chile. The drying process brings out its sweetness, giving the ancho a flavor that’s slightly reminiscent of a raisin with an earthy balance. Mexican cuisine is as complex as the region’s history, featuring as many as 60 different types of chiles. The ancho chile, native to Mexico, is most often used in a dish that requires mild heat.
