Fermented foods have made an impact on the culinary scene throughout the last few years as the latest and greatest health food trend. However, kimchi, a Korean fermented cabbage and vegetable dish, has been around far longer than this new trend. Some records indicate that the fermentation technique and traditional kimchi recipe have been around since as early as the 7th century. In Korean culture each family will typically have their own kimchi recipe, but in essence, cabbage and other vegetables are brined, seasoned, and then jarred for fermentation for days or even weeks. The finished kimchi can then be served as a side dish for any meal or even in fun and innovative ways such as on top of burgers or various salads!

Curious Spoon’s Kimchi Starter balances Gochugaru chiles with rice flour and other spices and can be rubbed onto Napa cabbage or mixed with other vegetables to make a delicious and authentic tasting kimchi.

Ingredients

Dried chiles, Rice flour, Salt, Miso powder (Soybean, rice, salt, aspergillus oryzae), Garlic, Cabbage extract powder (Maltodextrin, sugar, cabbage extract, corn oil), Sugar, Cellulose, Ginger, Scallions, Sulfiting agents. Contains Soy, Sulfites.

Preparation

1. In a bowl, mix 1/2 Napa cabbage, 1 carrot (sliced), 2-3 daikon radishes (sliced), and 2 tbsp. Kosher salt
2. Let stand stand 3 hours, then rinse and drain three times.
3. Boil 1/2 cup water and whisk in contents of packet.
4. Combine Kimchi paste and vegetable blend. Mix thoroughly.
5. Let stand for 24 hours, loosely covered.
