Also known as peri-peri or pili-pili, piri piri is both a chile pepper and a flavor profile brought to Southern Africa by the colonial Portuguese. The piri piri sauce evolved into an enormously popular condiment wherever it traveled with Portuguese colonial settlers and indigenous peoples including in Angola, Mozambique, Guinea-Bissau, and beyond. One of the most common chile peppers that make up the base for this sauce is the Bird’s Eye chile, a native chile of the Americas which Portuguese explorers brought back to Europe in the 16th century. The chile slowly journeyed its way around the world alongside the Portuguese armada and eventually into the Piri Piri sauce well-known today. Though each region has its own version of the Piri Piri flavor profile, the most common ingredients include chile peppers, citrus peel, red bell pepper, and onion.

To use this versatile sauce starter in your home kitchen, simply rehydrate it with water and simmer on the stove until it reaches the desired consistency. Use it as a base for pasta or pizza sauce for an extra boost of flavor or as a marinade for signature grilled Piri Piri chicken!
