Suya is typically made with skewered beef, but chicken, liver, or kidney meat may also be used. The Hausa, one of the largest ethnic groups in West Africa, are credited for origins. In Nigeria, suya kebabs are seasoned with a hot, nutty suya rub before grilled over an open barbeque or flame and feature a finishing touch of vegetable or peanut oil drizzle. The finished product is similar to the Thai or Balinese dish satay.
