Tandoori Masala Rub is inspired by the traditional Indian recipe for tandoori chicken, a favorite dish and flavor profile in Indian, Pakistani, and Afghan cooking. A generous helping of cayenne pepper lends this rub its bright red hue, and its heat is tempered with warm spices, savory garlic, and a hint of lemon citrus.
Tandoori is a method of cooking in a cylindrical clay oven that’s buried in the ground up to its rim. A charcoal fire heats the oven to optimal intensity and temperature to quickly grill the meat. Though this cooking style is found throughout Central and South Asia, it is thought to have originated in Persia. Many dishes can be made in a tandoori oven (including ‘naan,’ Indian cuisine’s most popular bread), but the most well-known and popular is ‘tandoori murgh,’ a skinless and marinated whole chicken that’s quickly grilled in the tandoor oven. The chicken is marinated in yogurt and the unique, bright red spice blend and then cooked to perfection. It’s become a popular dish throughout the world, sought out for its unique flavor and tender meat.
