Umami, a Japanese word meaning “delicious taste”, is recognized as the fifth taste after sweet, sour, bitter, and salty and is notoriously difficult to pin down. The term was coined 1908 by Dr. Kikunae Ikeda, a Japanese scientist studying the chemical components of the typical ingredients used in classic Japanese cuisine, such as kombu dashi. But it wasn’t until 1985 that the taste was recognized as a scientifically measurable taste. In fact, compounds in the flavor itself have been linked to the stimulation of salivary glands in the mouth, meaning foods with umami are literally mouthwatering.
