Scientifically speaking, umami is understood to come from glutamate and other naturally occurring compounds in products with a meaty or savory flavor. The flavor has been described as mild with a long-lasting aftertaste that quite literally stimulates the salivary glands, as foods with more umami cause mouthwatering.
