Alamo Campfire Beef Chili

When you think of Texas, a rich and flavorful bowl of chili may come to mind. Though different variations can be found across the country, the signature style in Texas (chili con carne) skips the beans to allow the beef and chile flavors to shine. However, we firmly believe that black, pinto, or kidney beans make for a hearty addition to any chili pot.
Our classic chili recipe features the Curious Spoon Alamo Chili Seasoning – a custom blend of ground ancho chiles, New Mexico chiles, and smoked paprika – to give it rich and authentic flavor with just the right amount of heat. When combined with ground beef, tomatoes, and beans, our Alamo Chili Seasoning makes preparing a batch of chili quick and easy. For a true Texas-style chili, skip the beans and use stew beef!


Ingredients
• 1 tbsp. Vegetable Oil
• 1 lb. Lean Ground Beef or Meat Substitute
• 1/2 Large Yellow Onion, diced
• 3 Tbsp Curious Spoon Alamo Chili Seasoning
• 1/2 cup Dark Red Kidney Beans, cooked
• 3/4 cup Crushed Tomatoes
• 1 1/2 tsp Kosher Salt
Optional Garnishes
• 1 cup Cheddar Cheese, shredded
• 1 cup Sour Cream
• 1/2 cup Green Onions, chopped

• Dutch oven or large pot
• Stirring spoon
Notes from the Chef:
For added flavor and depth, sauté the meat and onions until deeply browned before adding other ingredients. This will make for a richer chili – just make sure to scrape the bottom of the pot!

Prep all ingredients.

Heat vegetable oil in large pot over medium-high heat. Add ground beef and onion to pot. Cook, stirring often, until beef is no longer pink.

Stir in Curious Spoon Alamo Blend Chili Seasoning and cook for additional 3 minutes. Stir in remaining ingredients. Cover and reduce heat to medium-low. Cook for 25 minutes, stirring occasionally. Season to taste with salt.

Serve on its own or top with cheese, sour cream, and green onions.
