We’ve taken our Chorizo Seasoning – a spicy and savory medley of chile powders, garlic, and paprika – to bring the flavors of homemade Mexican-style chorizo to this recipe. When paired with tortilla chips for dipping, you’ll have yourself a delicious unique recipe that’s packed with authentic flavor.

• 1 tbsp. neutral Cooking Oil
• 1/2 lb. ground Pork, Turkey, or Meat Alternative
• 1 small Yellow Onion, diced
• 2 tbsp. Curious Spoon Chorizo Seasoning
• 1 tsp. Kosher Salt
• 1 lb. Chihuahua Cheese,* shredded
• Tortilla chips, tortillas, or bread, for dipping

Optional Garnishes
• 1/2 cup Tomato, diced
• 1/4 cup Green Onions, diced
• 1/4 cup Cilantro, minced
• 1/8 cup Jalapeños, seeded and diced

What is it and where to find it?

*Chihuahua: Also known as “queso chihuahua,” chihuahua is a Mexican semi-soft white and pale yellow-colored cheese. Mild and buttery in taste, it can be found in braids, balls, or rounds. It’s an ideal cheese for melting, making it a popular choice for queso fundido, quesadillas, chili con queso, and other dishes that require cheese sauces. Typically, these cheeses can be found in local Mexican markets or even in the cheese and dairy section of mainstream grocery stores.

    Prep all ingredients.

    Preheat oven to 400°F.

    Heat oil in medium skillet over high heat. Sauté ground pork and onions, breaking pork into small pieces. Continue to cook until mixture begins to fry and lightly brown. Add Curious Spoon Chorizo Seasoning and salt. Cook for additional 5 minutes.

    Pour chorizo mixture into 7" x 11" oven-safe dish. Cover chorizo with shredded Chihuahua Cheese.

    Bake 5-6 minutes, until cheese is melted and hot.

    Top with any desired additional garnishes. Serve warm with a side of tortilla chips or bread for dipping.
