Pollo Asado Chicken Tacos

  • 3 tbsp. Curious Spoon Pollo Asado Seasoning, divided
  • 1 tbsp. Canola Oil
  • 4 boneless Chicken Breasts, 4-5 oz each, pounded to 1/2-inch thick
  • 12 Corn Tortillas

Salsa Fresca

  • 1 large Tomato, diced
  • 2 Jalapeños, stemmed, seeded, and diced
  • 2 cloves Garlic, minced
  • 1/2 cup Cilantro, chopped
  • 1/2 Red Onion, diced

    Prep all ingredients.

    Whisk together 2 tbsp. Curious Spoon Pollo Asado Seasoning and canola oil in large bowl. Add chicken and toss well. Cover bowl and refrigerate for at least 1 hour (for best results, let marinate overnight).

    Heat grill over medium-high heat. Cook chicken approximately 3-5 minutes until one side of meat starts to brown. Flip chicken breasts and continue cooking about 3-5 minutes until meat is cooked through, reaching an internal temp of 150°F.

    Combine 1 tbsp. Curious Spoon Pollo Asado Seasoning, tomato, jalapeños, garlic, cilantro, and red onion in medium bowl. Mix until thoroughly combined.

    Cut chicken into strips or cubes. Serve on tortilla and top with the salsa fresca.
